MY RECIPES  :)

White Trash Mexican Martini

Really. I made this at somebody's house.
They had no pitcher OR martini shaker. Really?
Here's the recipe:

Mexican Martini

6 oz of Silver Tequila

3 oz of Grand Marnier

3 oz of Orange Juice

3 oz of Sprite

The juice of 1-2 limes

5-6 TBLSP of Jalapeno Olive juice*

12 Oz of Sweet and Sour

Rim glass with salt and garnish with Jalepeno Olives.*
I suggest you double the recipe and freeze what's left.
Thaw 15 - 20 minutes before serving.

*Merzetta is brand to look for to use for both the Jalapeno olive juice and the Jalapeno olives. The herbs in the jar are what makes the martini so delish! Whatever you do, DO NOT just add some Chardonnay to the mix. I already tried that...

I can't even believe that this has become my fav meal...Oy

Here's the recipe for Mango Margaritas:

Frozen Mango Margarita
Combine in a blender:
600 grams frozen mango chunks (about 1 1/2 pkgs)
1 cup silver tequila (I use resposado here too)
2/3 cup fresh lime juice*
2/3 cup Cointreau liqueur
1/2 cup super-fine granulated sugar
2 cups ice cubes

Pour in glasses. Top each glass with a splash of tequila - do not blend. Garnish with a slice of lime. Delish!

You will need to make this 1/2 at a time unless you have a HUGE blender. Double the recipe and you can freeze what's left. Thaw 15 - 20  minutes before serving.

OR, (and this is really good),
Don't thaw it at all, make a Mango Margarita Snow Cone! Delicicious.

*You can substitute this key lime juice for the fresh limes.

This is the brand of Queso I use. It's pretty inexpensive and it tastes great. Just warm it up in the micro and you're all set. For a special treat, add a dollop of sour cream and guacamole.

Homemade guacamole.
(kind of)

Take a few ripe avocados and mash them up with a fork. Add this salsa to taste. Easy-peasy and better than in a restaurant!
